Chapter 605 The taste of beggar’s chicken, both the cat and you want to know! Dundun: Are you so poor that you eat dirt? [Please subscribe]

"This is simple, I can do it!"

Seeing Lin Xu making peace with the mud, Shen Jiayue volunteered to help.

As for other dishes, I may not really be able to help you, but the beggar’s chicken dish is something that we know how to cook at the age of three, okay?

Chen Yan said:

"If you can do it, then I can too, just playing in the mud..."

Seeing her daughter and niece rolling up their sleeves and looking like they were about to take action, Han Shuzhen couldn't help but say:

"When you two have some free time, take Dundun for a walk on the nearby plank road, or help dig wild vegetables. Don't cause trouble here. You are so old, and you still want to play in the mud."

There are so many people here, but you don’t pay attention. Aren’t you afraid of being laughed at?

Shen Jiayue pouted and hugged Dundun:

"Come on, son, Mommy will take you to dig wild vegetables."

When Dundun heard this, he immediately wagged his tail.

It feels a little unfamiliar here, but feels like it has been here before, and wants to take a walk.

On the land next to it, Shen Guofu dug a pit, set up firewood, and lit a fire. Later, the firewood would be burned into charcoal, which would make the beggar's chicken.

While filling the pit with firewood, he chatted with Lin Xu about begging chickens.

"Xiao Xu, I heard that the beggar chickens in the past were not as particular as they are today. They even ate the chicken feathers and wiped them with mud. Is this true?"

Lin Xu said:

"That's true. Twist the chicken from the neck without draining the blood. Then dig out the chicken's butt and take out all the internal organs. Stuff some salt inside and smear mud on the chicken feathers. Keep smearing until After roasting and peeling off the hair roots, the mud will bring down the chicken feathers, so you can eat them without any delay... This is a standard beggar's practice, but it is not recommended now."

Roasting the chicken feathers together, the fishy smell and impurities in the chicken feathers are not lost at all, they are all absorbed into the chicken.

In the past, beggars without a pot or stove would make do with stolen chickens in this way, but now, basically no one does this.

Putting aside hygiene issues, the smell of chicken feathers inside is not much better.

Fortunately, people who can eat like this basically don’t pay attention to taste, just fill their stomachs.

Modern cooking pays attention to factors such as appearance, taste, aroma, etc., so the method of beggar's chicken has been re-improved, and various branch methods have also been developed.

For example, Qiankun Beggar's Chicken, Bread Beggar's Chicken, etc.

While they were mixing the mud here, Zeng Xiaoqi and Qi Siming had just washed their faces and walked towards the pond with their backpacks.

Zeng Xiaoqi's parents couldn't sit still and opened a vegetable plot next to the pond, which the couple is currently tending.

Qi Siming touched his backpack and asked:

"These are new clothes I bought for my uncle and aunt. Why are they so stuffed? There will be wrinkles."

The two went shopping two days ago. Zeng Xiaoqi bought some spring clothes for her parents, and today she stuffed them into her backpack and brought them over.

Qi Siming didn't pay attention when he came, but now he realized that the clothes inside were uneven and wrinkled.

Zeng Xiaoqi trimmed the hair beside her ears:

"I did it on purpose, so that if my parents find it too expensive and give up, they can use the excuse that there are wrinkles and they can't be taken away..."

I see... Qi Siming has lived a comfortable life since he was a child and has never experienced anything like this.

He sighed in his heart and then said:

"My dad has been helping you inquire these days. He always feels that it is inappropriate for your parents to work here. It seems very rude to us."

Zeng Xiaoqi refused as soon as she heard it:

"No, it's nice here. There are no complicated interpersonal relationships and the work is much easier than in my hometown. If I change to a higher-level job, my parents won't be able to adapt to it."

And for Zeng Xiaoqi, it doesn't matter how much money her parents earn. As long as she is not bullied in her hometown and can come and visit her from time to time, it is already much better than many migrant workers.

Who among these migrant workers in the capital can come here from time to time to have dinner with their parents, and even act coquettishly?

Moreover, Qi Zhentao just suffered a big loss in terms of nepotism, so he cannot be allowed to make the same mistake again.

"Okay, I'll tell you when I get back and I won't let my parents follow me."

"Well, no need to elaborate, it's quite nice here."

At the door of the kitchen, Lin Xu mixed the yellow mud with kneading dough, and then beat it hard a few times to make the mud as sticky as possible and easier to wrap it on the lotus leaves.

Chen Yuanyuan on the side asked:

"Brother, the master just said that there are eight chickens. Isn't the mud enough for you?"

Lin Xu said:

"Just count as many as you can, and wrap the rest in flour. This way you can have vegetables and staple food, and it's more delicious than wrapping it in yellow mud."

Wrapped in bread?

Dou Wenjing asked:

“Isn’t this how steak Wellington is made?”

"Yes, Chinese and Western food have many cooking methods in common. In addition to beggar's chicken, the Northwest also has breaded leg of lamb, which is similar to Wellington's."

Lin Xu mixed the yellow mud, washed his hands, and went to the kitchen to prepare the package for the beggar's chicken.

Taking the marinated chicken out of the basin, in order to make it taste better, Lin Xu put some soaked dried mushrooms, dried bamboo shoots, dried shrimp, ham, red dates and other ingredients into the chicken belly.

The amount is not very large, it mainly adds flavor to the chicken.

Place the ingredients, fold the chicken feet into the chicken belly, and insert the chicken wings into the chicken neck. This will prevent the chicken wings and chicken feet from being burned.

Then take a piece of blanched pork net oil and wrap the body of the chicken.

Wrap it and place it on the lotus leaf that has been blanched with hot water. Place the chicken back down on one corner of the lotus leaf. Then roll it forward. Then fold the excess parts at both ends of the lotus leaf onto the chicken body. Continue rolling forward and fold the whole lotus leaf.

Wrap a chicken.

Change a lotus leaf, this time the chicken's back is facing up, wrap the chicken in the same lotus leaf.

Put three layers in this way, wrap it with cotton thread, and a chicken is ready.

All the chickens were wrapped, Lin Xu took them outside and was talking to foreign friends about the fact that Chinese people actually use mud as a delicacy. Lucy then realized:

"What? You can't just put it in the mud and eat it?"

Lin Xu said:

"No, this is using the soil as an insulation layer to indirectly heat the chicken inside, so that the aroma of the chicken does not escape and the taste is naturally better."

After understanding, Lucy breathed a long sigh of relief.

She was mentally prepared to chew a mouthful of mud, but she didn't expect that she wouldn't need to do this.

The lotus leaf is wet, and it will easily fall off if you apply yellow mud directly. Lin Xu grabbed a handful of dry soil and sprinkled it on the surface of the lotus leaf. After spreading it once, he applied yellow mud on it, which made it very easy.

"It's just like making fried food. You sprinkle a layer of dry powder before frying. Sure enough, all the cooking steps are one and the same."

Although Dou Wenjing doesn't know how to cook, she has seen a lot and understands some terminology and techniques.

Lin Xu said:

"It's always the same."

The thickness of the yellow mud is about two centimeters.

After Lin Xu applied it, he started to apply the next one.

A total of four beggar's chickens were smeared with this yellow mud. They were all done, and the charcoal had been burned at Shen Guofu's side.

Almost all the wood has turned into red charcoal, and the heat can be felt from a distance.

Making a fire seems simple, but there are also skills. For example, when halfway through burning, you need to knock the firewood against each other so that the charcoal blocks on the surface will fall off and the wood inside will continue to burn.

Lin Xu used a shovel to dig out one-third of the charcoal blocks in the pit, and spread the remaining two-thirds underneath.

In order to prevent the temperature from getting too high, he deliberately spread a layer of dry soil in the pit, and then placed four beggar's chickens that looked like dinosaur eggs.

When placing them, keep a distance from each other and not be next to each other, otherwise it will not be easy for them to ripen.

Arrange and sprinkle some dry soil on the beggar's chicken, then pile the remaining charcoal on top, put some smaller firewood, and burn it around the pit.

Wait until it is burned to charcoal and then put it into the pit.

This keeps the temperature in the pit at a higher temperature without burning the chicken.

This is the simplest method. In addition to digging a pit, you can also build a simple earthen kiln and put the chicken in to stew it in the kiln method.

This practice is called kiln chicken.

However, regardless of the differences between kiln chicken and beggar's chicken, they are essentially the same type of dishes.

After cooking the traditional yellow clay beggar's chicken, Lin Xu returned to the kitchen and started kneading the dough to prepare the crispy beggar's chicken wrapped in dough.

Put all-purpose flour in a basin, add some salt, sugar, yeast powder, custard powder, and baking powder, stir into dough, and then knead it into a dough.

The amount of yeast powder should be less, about one-third of the usual amount of dough, because this dough does not need to be fully risen, it just needs to be fluffy.

Let it relax slightly, roll it into a dough slightly thicker than the pancake, and wrap the beggar's chicken.

Don’t worry about the lotus leaves sticking to the dough. After baking, the lotus leaves will fall off with a gentle shake.

Place the wrapped beggar's chicken on the baking grid of the oven, set the temperature, and start baking.

"Today's lunch will be a little late."
